Mothers Day Cupcake
Ingredients
110g butter or margarine, softened at room temperature
110g caster sugar
2 eggs, lightly beaten
1 tsp vanilla extract
110g self-raising flour
1-2 tbsp milk
For the buttercream icing
140g butter, softened
280g icing sugar
1-2 tbsp milk
A few drops food colouring
For the fondant
A pack of fondant icing in your desired colour(s)
Method
Preheat the oven to 180C/350F/Gas 4 and line a 12-hole muffin tin with paper cases.
In a large bowl, cream the butter and sugar together.
Beat in the eggs, a little at a time and stir in the vanilla extract.
Using a spatula fold in the flour, adding a little milk until the mixture is a dropping consistency.
Spoon the mixture into the paper cases until they are half full.
Bake in the oven for 10-15 minutes or until golden brown.
Set aside and leave to cool for 10-15 minutes, then transfer to a wire rack.
To make the butter cream icing, beat the butter in a large bowl until soft and add half of the icing sugar and beat until smooth.
Add the remaining icing sugar with a tablespoon of milk; add more if necessary until the mixture is smooth and creamy.
Add a few drops of food colouring to the mixture to create your desired colour and stir thoroughly.
Spoon the icing into a piping bag with a closed star nozzle and pipe the icing using a spiralling motion onto the cupcakes.
With a fondant rolling pin roll out your fondant icing, to your desired thickness.
Take your fondant cutter and place it firmly in to the fondant icing.
Using a tool set gently cut around the outline of the shape.
Decoratively place your fondant shapes on to your cupcakes to create your desired effect.
Constructing the Bouquet
You will need
12 cupcakes
Flower Pot (diameter 15cm)
Polystyrene Ball (diameter 15cm)
Tooth picks
Ribbon
Tissue Paper
Instructions
Place the polystyrene ball inside the flower pot.
Starting at the top place a toothpick in to the polystyrene ball.
Take a cupcake and place it on top of the tooth pick, making sure it’s secure.
Follow this process until the entire polystyrene ball is covered with cupcakes, (some cupcakes especially those on the side may need two tooth picks to hold it in place).
Take your tissue paper, crunch it up and place it in between the gaps of the cupcakes.
Finally, finish off the bouquet, and tie a ribbon around the flower pot.
